# Brewing & Distilling with Flavours

Getting Started

When To Add Flavour

-   Add flavour after fermentation is complete.
-   Adding flavour before fermentation may change the finished flavour profile.

Start Small

-   Start low.
-   It is better to have a subtle back note than over flavour an entire batch.
-   You can always increase flavour later.

Test Before Production

-   Experiment with finished product before scaling.
-   Example: Add 1mL (0.1%) flavour to 1000mL of beer.
-   Mix thoroughly before evaluating flavour intensity.

Record Results

-   Keep notes during testing.
-   Record flavour percentages, beverage style, alcohol content and tasting notes.

Production Tips

Scaling Up

Scale gradually. A flavour profile that works in a small test sample may require adjustment when moving into larger production batches.

Allow Time To Settle

After adding flavour, allow the beverage time to rest before final tasting. Some flavours integrate and evolve over time.

Different Bases Behave Differently

Alcohol content, sweetness, acidity, carbonation and fermentation character can all affect flavour perception.

Distilling Tip

Some flavour profiles can appear stronger or weaker in higher-proof products. Test at finished proof before making production decisions.
